PRAWNS BIRYANI
is simple to make and absolutely delicious, make and serve for a special lunch or dinner. 

It is much simpler to make than any other biryani varieties. Prawns have a delicate meat which requires very less cooking time.

PRAWNS BIRYANI is a simple biryani recipe with flavourful result. Simply follow the instructions for a tasty and quick biryani.

PRAWNS BIRYANI

INGREDIENTS 

1. FOR PRAWNS MARINATION
  
PRAWNS -1/2 kg
SALT - as needed
TURMERIC POWDER - 2tsp
CHILLI POWDER - 2tsp
LEMON JUICE - 1tbsp
OIL - as needed

Wash the prawns by adding some salt and turmeric powder. Then drain the water completely from the prawns. 

Marinate prawns by adding salt, turmeric powder, chilli powder and lemon juice. Set aside for at least 10 minutes.

After 10 minutes, In a fry pan heat the oil. Add the marinated Prawns to it. Saute for a minutes on medium flame.

2. FOR MASALA

ONION - 4
GINGER PASTE - 2tsp
GARLIC PASTE - 2tsp
GREEN CHILLI PASTE - 2tsp
SALT - as needed
GHEE OR OIL - as needed
TURMERIC POWDER - 2tsp
CUMIN POWDER - 1 1/2tsp
BIRIYANI MASALA POWDER - 2tsp
PEPPER POWDER - 2tsp
GARAM MASALA POWDER - 1 1/2 tsp
TOMATO - 2
CASHEW NUTS - as needed
GOLDEN RAISINS - as needed
CORIANDER LEAVES - as needed

∆  Firstly In a pan heat oil or ghee , add some onion and make it fry until just starts picking up golden colour. Next fry cashews and raisins. Then mix with coriander leaves and garam masala powder. keep it aside for garnishing.

∆ In the same pan add some oil, add onion, ginger paste, garlic paste, green chili paste, salt and saute for till soft.

∆ Then add turmeric powder, chilli powder, cumin powder, biryani masala powder, pepper powder, garam masala powder and saute it wellThen add tomato and close the lid for some minutes. Then add fried prawns and mix well. Cook on low heat. Do not add any water and do not over cook the prawns.

Add coriander leaves and mint leaves and mix. cook for another 30 seconds.
Off the flame.

3. FOR RICE

Basmati rice - 3cup
Bay leaf -1
Clove -3
Cinnamon sticks -1
Cardamom -3
Star Anais -2
Sliced Lemon - 2
Salt - as needed

∆ Take a large pot, Add oil, bay leaf, cloves, cinnamon sticks, cardamom, star Anais, sliced lemon and salt. Then add enough water. Bring it to boil. Add rice and cook until the rice is 90% done.

LAYERING THE PRAWNS BIRYANI

When the rice is 90% done, using a large colander or slotted spoon take out the rice. 

Take a non-stick biryani pot add a layer of rice, top of with some prawns masala. Add more rice. Repeat this 1 more times. 

Sprinkle the melted ghee and saffron water over the rice layer. And garnish with above mentioned fried onions, cashews, raisins and coriander leaves.

Cover the pot with the tight fitting lid. Place the pot over a low flame and cook for 15 minutes.

After 10 minutes, open the lid, dish out
Yummy hot prawn biryani and serve with salad or curd.

Serve this biryani on holidays or weekends and enjoy with family and friends.
