AVIAL
AVIAL is a traditional recipe of Kerala and an essential dish of sadya. It is considered as an essential side dish of a sadya. It is a mixture of all kind of vegetables except soft and pulpy vegetables. You can include or exclude a vegetable, depending on the availability.

INGREDIENTS
Carrot -1/2cup
Yam -1/2cup
Raw banana -1/2cup
Beans -1/2cup
Long beans -1/2cup
Drumstick -1/2 cup
Potato -1/2 cup
Grated coconut -1cup
Cumin seeds -1/2tsp
Garlic -5
Green chilli -5
Shallots(small onion) -6
Curry leaves -as needed
Turmeric powder -1/2tsp
Yogurt - as needed
Salt -for taste
Coconut Oil -3tbsp
Hot Water -2 cup
Firstly rinse and then drain all the vegetables. Then peel and chop them in medium to long sticks or baton. The vegetables need to be chopped like a slight thick potato french fry.
In a clay pot, add all the vegetables, turmeric powder, salt, curry leaves and coconut oil mix well, Then add hot water and cover it to let it slowly cook.
In between do check, if the water dries, you can always add water till the vegetables are almost cooked.
Heat on medium flame until the vegetables are cooked.
FOR THE CURRY PASTE
Grind grated coconut, garlic, green chillies, shallots, cumin seed, turmeric powder and curry leaves till it become a coarse paste.
Add this paste in the middle of Avial and cover it with a lid. Let it steam cook for 5 minutes.
Mix the Avial gently without breaking the vegetables. later add yogurt, curry leaves, and coconut oil on the top.
Mix gently and switch off the flame.
