BAKERY STYLE LADDU a delicious and popular Indian sweet. Laddus are primarily made from flour, fat (ghee/butter/oil) and sugar. Laddus are often made of gram flour but can also be made with semolina or chickpea flour. Sometimes ingredients such as chopped nuts and/or dried raisins are also added. The type of ingredients used may vary by recipe.

BAKERY STYLE LADDU


INGREDIENTS 

Gram flour - 2 cup

Water - 1 1/2 cup 

food colour - 1/2 tsp

Salt - as needed

Suger - 2 cup

Water (for syrup) - 1/2 cup

Cardamom powder - 1/2 tsp

Cashews - 2tbsp

Raisins - 2tbsp

Ghee - 1 tbsp


STEP 1

Sieve besan for 1 to 2 times, Take all the dry ingredients, gram flour, salt and food colour for the boondi batter in a mixing bowl. Then add 1 1/2 cup of water (Pour little at a time) and whisk smooth without forming any lumps. Prepare a thick flowing consistency batter. The consistency of the batter is important. We will check if the consistency is right, by frying a few boondis. The amount of water to be added depends on the quality of gram flour. The boondis should have a round shape. If they become flat, the batter is thin and if they get tail ends, the batter is thick. If thin, then add a bit of gram flour and check by frying a few boondis. If thick, then add a bit of water and then do the same test. Once you get the correct consistency, proceed with the next step of frying the boondis.

STEP 2

Heat oil in a pan, take small holes perforated spoon and pour prepared besan batter. Slowly tap with the help of spoon, making sure the drops of besan fall into oil. Do not over crowd the boondis in oil. Fry the boondis for less than a minute. It should not get crisp. It is enough if the boondi is cooked. It will have to remain soft. Remove using a slotted spoon and drain onto tissue paper.

STEP 3

Put this fried boondis in a mixing jar and grind it.

STEP 4

Now prepare the suger syrup :

In a large thick bottomed kadai, add 2 cup of sugar, 1/2 cup of water and cardamom powder, mix well till the sugar dissolves. Allow to boil till you attain 1 string consistency.

STEP 5

Now take boondis in a bowl, pour the sugar syrup. Let it soak for 1 hour.

STEP 6

Now Heat ghee in a small pan, add  cashews and raisins and fry till it is light golden. Pour this over the boondi mixture, and mix well with the help of spoon till the sugar syrup is absorbed. when the mixture still lightly warm, prepare laddu.

STEP 7

Allow it to dry for few hours. Store in an airtight container once cooled.
