MIXED VEGETABLE SUBJI / SABZI


Subji/sabzi is a delicious indian dish made with mixed vegetables and a unique combination of spices.

Indian subji consists of mixed vegetables cooked with spices and curry flavors, and it is a great way to get lots of vegetables into your meal. 

This one is incredibly healthy, made with beans, bottle gourd, carrot, raw banana, Capsicum(bell pepper) and potato along with plenty of Indian spices. The taste of the  mixed vegetables subji will make you addicted to it.                                   
  
Subji is a mixed vegetable curry made with aromatic spices and coconut milk. Serve the curry with chappathi, poori and paratha or with any kind of Indian Bread.

MIXED VEGETABLE SUBJI / SABZI


INGREDIENTS

Carrot  -  1/2 cup
Potato  -  1/2 cup           
Beans   -  1/2 cup
Raw banana   - 1/2 cup
Capsicum       - 1/2 cup
Bottle gourd   - 1/2 cup       
Coconut  milk  -  1 cup
Cumin seeds     - 1/2 tsp
Mustard seeds - 1/2 tsp                    
Red chilli powder -  3 tbsp                      Turmeric powder  - 1/2 tsp  
Garlic cloves  -  1 tsp ( finely chopped )
Green chilli - 3                                      
Curry leaves - as needed
Water - as required     
Oil  - 4 tbsp

PREPARATION
                                  
∆ Firstly wash and peel all the vegetables. 

∆ Then chop them into medium cube pieces.

∆ Heat oil in a pressure cooker and add the mustard seeds. Once the mustard seeds begin to splutter, add the curry leaves.

∆ Then add carrot, potato, raw banana, beans, Capsicum(bell pepper) and bottle gourd and saute on a  medium flame. 

∆ Then add red chilli powder, Turmeric powder, garlic, green chillies, cumin seeds and salt. 

∆ stir well.

∆ Add the required amount of water for cooking the subji.

∆ Close the lid and cook till the subji is done. It takes about 3 whistles. Some subji varieties take longer to cook than others, so adjust accordingly.

∆ Once the subji are cooked, add coconut milk (thin consistency) and mix well.
Boil for 7-10 minutes or till vegetables is cooked completely. 

∆ Turn off the flame.
