HOW TO MAKE FISH BIRYANI
For Fish Marination :
Fish - [I have used king fish/Aiykoora/ King Mackarel to make this recipe but you can use any fish of your choice.]
Turmeric powder - 1/2 tsp
Red chilli powder - 3 tbsp
Lemon juice - 1 TSP
Salt - as needed
For Fish Masala :
Onion - 3 (finely sliced)
Ginger garlic paste - 1 tbsp
Green chilli paste - 1 tbsp
Tomato - 2 sliced
Salt - as needed
Turmeric powder - 1/2 tsp
biryani masala powder - 1 1/2 tbsp
Cumin powder - 1tsp
Lemon Juice - 1 tbsp
0il / ghee - 4 tbsp
Coriander & mint leaves - (chopped 1 handful)
For Rice:
Jeerakashala / khaima rice - 2 cup
Cardamom - 3
Cloves - 3
Cinnamon stick-2 medium pieces
Ghee - 3-4 tbsp
Salt as required
Water - 3 cup
For Garnishing:
Mint & Coriander Leaves -
(chopped)
Biryani masala - 1/2 tsp
Ghee - 1-2 Tbsp
PREPARATION :
STEP 1
Clean and cut fish in to pieces. Wash and drain the water completely.
Step 2
In a bowl, add fish pieces and marinate with turmeric powder, red chilli powder, lemon juice and salt. Mix well and set aside for 10 minutes.
STEP 3
Wash the rice thoroughly and drain the water completely and set aside.
STEP 4
Shallow Frying Fish:
∆ Heat 5 tbsp of oil in a pan and spread it well. Add fish and fry on both the sides until golden, take care while you flip the fish otherwise it may break.
∆ Once it gets cooked and fried, Remove from oil and set aside.
Step 5
Masala Preparation :
∆ In a biryani pot add oil/ghee, then add onion, ginger garlic paste, green chilli paste, salt and saute for till soft.
∆ Then add turmeric powder, cumin powder, biryani masala powder, lemon juice and saute it well ( Until the spices are well combined). Then add tomato and close the lid for some minutes. Cook on low heat. Do not add any water and do not over cook.
∆ Finally add fried fish, coriander leaves and mint leaves and cook for another 30 seconds.
∆ Remove from heat and set aside.
STEP 7
Rice preparation :
∆ Keep a large vessel with 3 cup of water. When the water starts to boil add salt, cinnamon stick, cloves, cardamom and ghee.
∆ Then add 2 cup rice. Put the flame to medium.
∆ Cover and cook on a low flame simmer till the water is absorbed and the rice is cooked. Do check a couple of times when the rice is cooking.
∆ Once done, Open the lid and gently fluff the rice.
Step 8
Layering
∆ Take a non-stick biryani pot, Spread half of the cooked rice, top of with fish masala. Spread other half of the cooked rice over the meat.
∆ Spread the chopped mint and coriander leaves over the rice.
∆ Sprinkle ghee and biryani masala powder.
∆ Cover the pot with the tight fitting lid. Place the pot over a low flame and cook for 10 minutes.
∆ After 10 minutes, open the lid, dish out
hot fried fish biryani and serve with salad and pickle.
Serve this biryani on holidays or weekends and enjoy with family and friends.
