SWEET SEVA / MADHURA SEVA
Sweet seva is a sweet fried snack from Kerala which tastes delicious with a cup of tea.
These sevs are coated with sugar and are crunchy to much.
___________________________________________INGREDIENTS:
For sev :
Chick Pea Flour/Besan Flour - 1 cup
Rice flour - 1 cup
Cumin seeds - 1 tsp
Black sesame seeds - 1 tsp
Salt - as needed
Water - as needed
Oil - for deep frying
For sugAr SYRUP :
Sugar - 1 cup
Water - 6 tbsp
Sev Preparation ;
∆ In a bowl, mix chickpea flour, rice flour, cumin seeds, black sesame seeds and salt. Then add water ( pour little at a time) to make a soft dough.
∆ Heat oil in a frying pan on medium heat. Put the prepared dough in a string hopper/idiyappam mould/seva with the big hole attachment as batches and press it into the hot oil in circular motion. Fry both sides. Fry each batch till crisp and light golden in color, Don't forget to flip in between. The frying time is pretty quick, so be aware of over-browning.
∆ Drain the excess oil on a paper towel and gently crush it into small pieces with your hands, keep it aside till ready to be used.
Sugar syrup preparation AND Mixing:
∆ In a heavy bottomed pan, melt Sugar in 6 tbsp of water and boil it till it reaches a one thread consistency.
∆ Remove from heat, add the fried Sev into the Syrup and mix thoroughly until the Sev is evenly coated with the Syrup. let it cool down a bit and dust the powdered sugar on top. Gently mix to incorporate.
∆ Allow to cool completely. Store in air tight containers.
