Today I am sharing an interesting recipe of pickle with gooseberries.
Pickles are a kind of condiments in the indian cuisine that are served during a meal.
In my fridge there is always two to three jars of homemade pickles all the time. I serve pickles with lunch or dinner.
My mother is very good in making pickles. Her mango pickle is a hit among friends and relatives. So naturally I learnt to prepare all the pickles from her. You can definitely look forward for a collection of pickle recipes.
Homemade indian gooseberry pickle is very easy to prepare and at the same time, it is very healthy as compared to the store-bought pickle. It goes very well with rice. Gooseberries are loaded with lots of vitamin c, fiber and antioxidants.
I usually prefer home made pickles as store bought ones are loaded with preservatives. Pickles are very simple and easy to prepare and does not take much time.
Eat daily one gooseberry for good health. You can also eat more. This is so addictive that you cant stop eating one. You will want to have many. It is refereed and known with several names but popularly also known as nellikai.

GOOSEBERRY PICKLE
PREPARATION FOR PICKLING GOOSEBERRIES IN SALT WATER.
INGREDIENTS
Fresh gooseberry to be chosen for this recipe.
GOOSEBERRIES- as needed
GREEN CHILLIES- 3
WATER- as needed
VINEGAR- 1/2 cup
SALT- as needed
• Wash the gooseberries.
• Make slits in gooseberry.
• Likewise clean the green chillies and make slit.
• Take it in a glass jar and add water, vinegar and salt. Mix well.
• Close the lid of the jar and keep it in room temperature for about a 2 to 3 days or at least a week.
• After a week, check if the gooseberries have become soft. If they lose their bitterness, they are ready to be eaten. So take the gooseberries by separating the segments and removing the seeds from centre.
Gooseberries are now with a flavour of green chillies, salty and tangy.
These gooseberry bites are sure to tickle your taste buds and make you fall in love with them. Gooseberry is one of the best known sources of Vitamin C
COOKING METHOD
INGREDIENTS :
GOOSEBERRIES - 1 cup
DATES - 1/2 cup
GARLIC - 7 cloves (Chopped finely)
GINGER - 1 Small piece (Chopped finely)
GREEN CHILLI - 2 (Chopped finely)
RED CHILLI POWDER - 1 tbsp
PICKLE POWDER - 2 tbsp
MUSTARD SEEDS - 1 tsp
CURRY LEAVES - as needed
SALT - as needed
VINEGAR - 1 cup
COCONUT OIL - 5 tbsp
STEP 1
Soak 1/2 cup dates in 3 tbsp vinegar for 15 min
STEP 2
After 15 min add this soaked dates in the mixer jar and grind it to a paste and set it aside.
STEP 3
Heat a kadai, add cocunut oil, splutter mustard seeds, then add green chillies, garlic, ginger, and curry leaves and saute on a medium flame for 3 or 4 minutes. (Don't burn this ginger garlic ).
STEP 4
Then add vinegar, red chilli powder, pickle powder and salt. Mix well and bring to boil for about 3 min. Finally add dates paste and mix well.
Switch off the flame.
STEP 5
Finally add gooseberries, mix well.
Gooseberry pickle is ready.....
After it cools completely, store it in a clean, dry glass bottle and refrigerate it. It stays good for several months without damage in the refrigerator.
Serve with chapati, rice and paratha....
