Chicken is a popular side dish that everybody loves to cook and eat. There are probably thousands of different variations to chicken fry recipe including what you can add to the marinade, the quantity of spices etc. 

These juicy smoked chicken come out perfect each and every time. Say goodbye to dry chicken with this easy recipe for tender and flavorful chicken fry.

This recipe is very easy and it has less time for preparing. Here all ingredients such as turmeric powder, garam masala powder, pepper powder, red chilly powder, cumin powder, lemon juice, chicken stock (maggi cube), ginger paste, garlic paste, green chilly paste, coriander leaves and mint leaves are together grinded to a fine paste and then marinate well with this chicken. It gives special flavour of spices and have a spicy and juicy tastes.

JUICY SMOKED CHICKEN FRY

INGREDIENTS

Chicken     -   1 kg
Ginger paste   - 1 tsp
Garlic paste   - 1 tsp
Green chilly   - 1 tsp
Garam masala powder    - 1 tbsp
Red chilly powder   - 2 tbsp
Turmeric powder     - 1/2 tsp
Pepper powder         - 1/2 tsp
Lemon juice          - 1 tsp
Cumin powder     - 1/4 tsp
Chicken stock ( Maggi cube) - 2 cubes
Mint leaves       - 1 handful
Coriander leaves   - 1 handful
Food colour     - 1 tbsp
Salt   - as needed
Sunflower oil.  - 1 tbsp
Charcoal   - 1  piece

PREPARATION

• Take chicken pieces, remove skin, wash and drain well.

• Line up the each chicken pieces to catch the spice.

• Take a mixer grinder, add ginger paste, garlic paste, green chillies paste, add spices such as red chilly powder, garam masala powder, turmeric powder, pepper powder, cumin powder, lemon juice, salt, sunflower oil, mint leaves, coriander leaves and chicken stock. Then grind it well together until it turns to a fine and thick pastes.

• Transfer the grinded masala mix to a bowl and add chicken. Then rub this marinade onto the chicken pieces and add food colour, mix well.

        keep it in a refrigerator for 30 min.


COOKING METHOD

FRYING CHICKEN

Take a heavy bottommed kadai, heat enough sunflower oil. Then fry all the chicken pieces in a medium flame. Avoid over cooking.

Once it fried, you can remove from the Kadai. 

HOW TO GIVE JUICY FLAVOUR TO CHICKEN

Then place the chicken into a grill basket, and lock the basket properly. 

Heat a pathiri tawa.

Place the grill basket over the pathiri tawa for less time. 

Stab with fork and brush the chicken liberally on both sides with melted butter. Do this 2 to 3 times.     ( I highly recommend using butter. It adds great flavor and helps give a nice golden crust on the outside ). 

HOW TO GIVE SMOKED FLAVOUR TO CHICKEN
 
Switch on the burner, place the charcoal piece in the top of the burner. Keep it in high flame. Then smoke / burn the charcoal until it turns to gray/burnt colour.

Take a pressure cooker, transfer the chicken into this. Then put one small steel bowl on any side of the cooker. Then transfer the smoked charcoal into this bowl. Then add olive oil on the top of Charcoal. Close the cooker and keep aside for 30 minutes.

Tasty juicy smoked chicken is ready to serve. 
You can serve with any meals. Its very tasty to serve this smoky chicken with any dip such as hummus, mutabal etc.
