Elay Ada is an Indian sweet/dessert and traditional authentic Kerala delicacy. It is made of fresh grated coconut, jaggery, and nuts, which is layered inside a dough made of rice flour and steamed in a banana leaf.

Elay Ada is a dessert/sweet recipe which is cooked using steam. If you like to make a healthy and yummy dessert, you could add this recipe in your wish list.

In my home my grandmother usually makes Elay Ada as a Tea-time snack, she usually varies the fillings, sometimes it will be coconut mixed with jaggery or sometimes it will be cocunut mixed with suger.

Elay Ada is a authentic and traditional kerala delicacy made with rice flour, jaggery, coconut and nuts. It is a traditional dessert recipe, can be made and serve for evening snack with a cup of tea or coffee.

Elay Ada is much easier to prepare. It is using jaggery and fresh cocunut delicious stuffing (I always recommended using fresh and tender coconut), Rice flour dough for layer (The rice flour dough has to be smooth and easily spread on the banana leaf), Banana leaf for protection would make a wonderfully unique and healthy dessert.

The coconut and jaggery stuff with rice layer steamed along with banana leaf gives a wonderful flavour.

Elay Ada is a main dish found in most of the local shops in Kerala.

INGREDIENTS :


For rice flour dough:

Rice flour - 1 cup

Salt - as needed

Water - as needed


For stuffing :

Grated coconut  - 1 cup

Jaggery - 1 cup

Water - 1 cup 

Nuts - 4 tbsp (finely chopped)

Ghee - 2 tbsp

Cardamom powder - 1/4 tsp

Banana leaf

To prepare rice flour dough :

To prepare rice flour dough, add rice flour and salt into a mixing bowl, add water little by little and knead the mixture to form a smooth / soft dough.

Keep it aside.


STUFFING PREPARATION :

STEP 1

To prepare stuffing, put the jaggery into a deep bottomed pan, add 1 cup of water and melt it. Once it boils, switch off the fire. Allow it cool slightly and strain it into a metal strainer, this is to remove the dirt.

Step 2

Then take another pan add 1 tbsp ghee and coconut. Roast until light brown and nice aroma comes.

Step 3

Pour jaggery syrup to it. Cook until it gets thicken, the stuffing need to be sticky and aromatic. 

Step 4

Then add 1/4 tsp of cardamom powder and mix well.

Step 5

Next add nuts and stir well. Once the stuffing reaches thick consistency flame off.

Stuffing is ready.

Step 6

Finally, add 1 tbsp of ghee and mix well.

ASSEMBLING AND STEAMING:

Step 1

Firstly, warm the banana leaves so that it will easy to fold. 

Step 2

Take a piece of Banana leaf and apply ghee and grease the leaf.

Step 3

Take the dough and divide it into a ball sized equal portions.

Step 4

Take a ball sized dough and flatten over a banana leaf.

Step 5

Place a tbsp of prepared stuffing on one side and fold the other half over it.

Step 6

Press lightly and repeat the process till all the dough and stuffing is used. (Shape or design elay ada to your choice).

Step 7

Place in a steamer and steam for 15 minutes or until it is cooked completely.

Finally, elay ada is ready...
