This mango phirni is easy to make. Just a few preparations you need to do like grinding the rice, cashews and almond and preparing mango puree and the rest of the method is easy. Furthermore some important tips and recommendations for a perfect mango phirni recipe :

firstly, i always recommend to use sweet ripe mangoes for this recipe other wise you may end up adding more sugar if sour mangoes are used.

• secondly, always add the mango pulp once the rice phirni comes to room temperature.

• finally before serving make sure to refrigerate it. It tastes great when served chilled.  

This tastes close to pudding in consistency but tastes more like mango rice kheer. Phirni is later on flavored with cardamom to add some authentic indian flavors to this dessert and served in small clay pots for a traditional feel. But if clay pots are not available, you can definitely serve it in a regular serving bowl.

INGREDIENTS

RICE     -  1/4  cup (soaked).                                          Any good flavourful rice                                  will work for this recipe.

MILK    -  1/4 cup ( for grinding                                    rice + 1/2 ltr ( for                                           making phirni )

MANGO   -  1 big ( ripe ) for                                            making puree

CASHEWS  - 1 tbsp

ALMOND    - 1 tbsp

CARDAMOM POWDER-1/2 tsp

SUGER          -  1/3 cup          

SAFFRON    -  3-4 thread


PREPARATION


• Rinse 1/4 cup basmati rice and soak in water for 30 min. After 30 mins, drain the water from rice and transfer rice to a mixer jar along with same quantity milk (1/4cup ). Then grind it a coarse paste. and set it aside.

• Soak cashews and almond in boiled water for 30 min. Then peel the almond skin. Add soaked almond and cashews in the mixer jar and grind it to a paste and set it aside. ( Add nuts of your choice, I used almonds and cashews ).

• Take a ripe mango, peel the mango and cut it to make mango puree. ( Add the mango cubes in a blender. Blend till smooth. Keep the mango pulp aside ). Dice the few mango and keep aside in the refrigerator for garnishing purposes.


COOKING METHOD

STEP 1   

In a sauce pan add milk and and bring it to boil. Allow the milk to boil in medium flame till it reduces to 3/4 of quantity. Stir in between so as to prevent it sticking to the bottom.
    
STEP 2

Take a ladle of hot milk and add few saffron threads and set it aside.

STEP 3

Now, add rice paste and start stirring continuously to avoid the lumps and cook for few mins until rice is cooked. ( Keep mixing continuously in low flame after rice paste is added else it will form lumps ).

STEP 4

Once rice is cooked add sugar and cardamom powder. Stir well and cook on a low flame.

STEP 5    

Add saffron milk and almond-cashew paste and mix well. Once the mixture is thick more like pudding consistency switch off the flame.               

STEP 6                                      

Let it cool for sometime. Then add 1/2 cup mango pulp/puree and mix well till combined.

       - Refrigerate for about 30 min-

( Do not forget to chill this Phirni in the refrigerator for a few hours before serving, because it tastes the best when it is cold ).

STEP 7

Take the phirni out after 30 min. Garnish it with chopped nuts and few fresh mango pieces on top, and your lip smacking sweet is ready to serve.
